Is every screened cable suitable for a thermocouple?

No. Screening alone does not identify a thermocouple extension or compensating grade. The conductor system and instrument requirements must match.

Is sensor temperature the same as cable temperature?

Not necessarily. Provide both the sensor measurement range and the actual temperatures where the cable runs.
